The Shin Japanese Pure Malt Whiskey is such an exclusive expression that to start we discover where the distillery is located in Niigata, Japan.
Shin Malt whiskey is sourced from the highest quality malt whiskeys around the world and finished in our own distillery, aged in our Mizunara OAK wood bars, then hand bottled in Japan.
The malt is imported, malted in Scotland and imported to Japan.
The cereals and barley, together with the water, are pounded in a stainless steel pot (700Lx2).
The hardness of the water is about 38 ppm, soft water, extracted from groundwater coming from the mountains.
The head of the distillation we call first-draft “low wines” are about 21% ABV, and the second-distillation ABV increases to about 64%.
It takes about 8 hours to process each stage of the distillation.
The single malt whiskey is aged in bourbon and sherry casks, then examined in stainless steel tanks, once this process is complete we age it again in Mizunara oak casks (around 500l) for approximately 3 months.
Completion during the summer season may be shortened compared to winter time.
The Shin is made at the Shinobu Distillery which was founded in 2017 and obtained the whiskey distilling license in the same year.

Shinobu continues to buy bourbon, sherry and wine casks and plans to take around 2,000 casks/casks by 2021 for its single malt and single malt whiskies.

Shin Malt whiskey is created in the Japanese coastal region of Niigata, on the west coast of the country.
The area is famous for its “Three White Treasures”: snow, rice and sake, which have been grown there for centuries.
