Sugar cane is produced on the island of Shikoku, the smallest and least populated of the four main islands that make up the Japanese archipelago.
Sugar cane is grown here, by hand by local farmers.
This cane is pressed to obtain the pure juice, but it is also heated to obtain sugar cane honey.
A unique distillation style.
Using an unusual technique, it is distillation in a stainless steel alembic, which, unlike copper, rectifies the juices less and preserves more aromatic components.
Aging in barrel
The aging takes place in new American white oak barrels, which ensures the full expression of the raw material, offering at the same time a gourmet delicacy.
