    Waterford Single Malt Whisky Heritage Hunter 1.1

    Waterford Distillery launches new Arcadian Series bottlings, this time two peaty single malt whiskeys made from two types of farmhouse single origin barley, both with distinctive terroirs and flavours.

    The crop from each farm was peated at different levels: Fenniscourt barley at 38 ppm and Ballybannon barley at 47 ppm.

    Heritage Hunter, limited edition of 120 bottles.

    For a little over 15 years, Hunter was the barley variety for Irish malt, accounting for 75% of Irish malting barley purchases in 1966. A favorite of brewers and distillers for the distinctive, intense flavors it imparted . Waterford, over two years into our own project, Hunter barley was finally available on a scale we could distill: Head Brewer Neil commented on its flavor and quality just as his 1960s predecessors did. The original 50 grams of seeds eventually led to 50 barrels of whiskey for us.

  • Waterford Single Malt Whisky Organic Gaia 1.1

    Waterford Organic Gaia 1.1 is Ireland’s first whisky distilled f rom certified organic Irish barley. Hence the name Gaia, the neopagan goddess of yore, a personification of Mother Earth herself, is a fitting custodian.

    For this whisky, Ouverture variety was used with Mauri’s Distiller’s Yeast through a fermentation period of 136 hours. The whisky is matured in the following barrels for a total of 3 years 9 months and 20 days.

    Okinawa's warm and humid subtropical climate and the breeze from the Pacific Ocean help accelerate barrel maturation, creating a rich and balanced flavor with hints of tropical fruits.

    Nose: Aromas of citrus, pineapple, banana and other tropical fruits, with a mild sweet vanilla ice cream flavor. Sweet and balanced.
    Flavor: A light body and a delicate malt, with a hint of ginger juice and white wood flavor.

    Meisei literally means “celebrity” is a star that is definitely born with its rich and deep notes of vanilla and oak.

    This blended whiskey is made up of a mixtu- re of wheat and malt whiskey, of which a good part (45%) ages in American oak barre- ls.

    Established more than 100 years ago in Eigashima, the city of Akashi is the place chosen to build the White Oak Distillery which was the first in Japan to obtain the license to distill spirits in 1919, according to legend, it would therefore be the first in distilling whisky.

    Located in the city of Kobe and overlooking the picturesque Seto Inland Sea, it is the only distillery in Japan that is situated on the coast.

  • Akashi Japanese Blended Sherry Cask Whisky

    Akashi Blended Sherry Cask, is an initiation, for you to discover aging in Japan, in Sherry Cask barrels, being a blend made with 70% grain whiskey and 30% malted barley, distilled twice in two stills and aged in Ameri- can oak ex-Sherry barrels between 3 and 4 years.

    A whiskey with sweet touches, with intense notes of spices and nuts.

    The Akashi distillery was founded in 1888 and produced only sake until 1984, when stills for whiskey production were added to the factory: these are used for one month of the year, so the quantities produced are always very small.
