We are embarking on a long journey, a journey as ambitious as it is pioneering. The destiny is to create not only a more attractive Irish whiskey, with new aromas, with new barrels, but also the deepest single malt in the world.
Waterford Irish Single Malt Whiskey has chosen Waterford because here, on the banks of the River Suir, on Ireland’s sunny southeast coast, we have a unique state-of-the-art facility originally built by Diageo in 2004 and converted for distillation in 2015.

The barley main element of Waterford Whiskey, in which we were clear that we had to know exactly where our barley came from, where and how it was grown, is therefore key, for us this step, because if we know the whole process, we will know more about how distill and how to enhance, improve our whiskeys.
Taking the principles of Islay one step further, that’s why we’ve sourced an unprecedented 86 Irish farms, including organically grown and biodynamic barley in 19 different soil types.
With a pioneering digital logistics system in the world, which tracks in real time and using AI (artificial intelligence) in the process, the plot (Terroir) of each farmer is harvested, stored, malted and distilled separately.
Thus we can capture in the spirit (Distilled) the terroir of each farm, that subtle character modeled by the microclimate and soil of each Terroir, provides exclusivity and a new way of understanding whiskey.

In the sunny south-east of Ireland, warmed by the Gulf Stream, humid, warm air cuts through fertile soils to produce a green landscape and the best barley in the world.
Since barley is the source of malt whiskey’s complex flavors, it makes perfect sense for us to focus on where and how barley is grown.
Those flavors are determined by the place, by the soils that nourish its roots, by the microclimate in which it matures. By terroir.
We have worked with a total of 86 Irish growers to date, around 40 a year, some organic, some biodynamic.
So all of our whiskeys use 100% Irish-grown barley, one farm, one terroir, at a time.
Every year after harvest, the roads of rural Ireland fill with tractors from our growers hauling barley of agricultural origin, and almost simultaneously converge on a special bespoke storage facility, strategically located in the center of our distillery.
This is a wonderful structure unique in the world, which we call our Barley Cathedral, and next to it, as we add more producers, is our Chapel.
Built specifically for our requirements, a logistical challenge in its own right, without each farm’s individual crop sleeping in its own container, in separation and under ideal conditions, there can be no integrity or traceability.
A forgotten hero, the Cathedral is the enabler of the terroir.
Where our distillery is located today, it used to be a brewery on the banks of the River Suir since 1792. Today’s Waterford Distillery, along with the technological marvel we call the Facilitator, allows us to create elite whiskey. We keep each farm’s harvest clearly separate, and treated equally, as we transform it from grain to liquor.
State-of-the-art equipment combines ancient knowledge, about local Irish barley, with long 120-hour fermentations, unhurried distillation with an exceptional oak spectrum. In this way we can reveal the maximum expression of the terroir, farm by farm, harvest by harvest.
