Founded in 1996, today Paul John Whiskey sells more than 15 million cases worldwide, John Distilleries is also the maker of the sixth largest whiskey brand in the world: Original Choice Whiskey. Paul John is a single malt whiskey from John Distilleries, over the years it has gained a reputation in the niche market.
We have more top brands include Bangalore Malt, Black Pelican Fine Whiskey, Mont Castle French Grape Brandy, and Big Banyan Wines. Sazerac, the second largest family-run spirits company in the United States, has made a strategic investment in John Distilleries.
Entering the highest echelons of the Single Malt world is not an easy task and especially in such a short time, but our founder Paul P. John, President of John Distilleries Pvt Ltd, wanted to create an Indian Single Malt that would captivate even the most true whiskey connoisseur.
Guided by his singular passion, tomes of wisdom, and the extraordinary skill of his master distiller Michael D’Souza; they set out on the journey to create the Great Indian Single Malt. With every sip of every expression, one can fervently savor the rich flavors of India.
Paul P John ventured into the spirits industry in 1996 and, in just over a decade, their distribution spread from their headquarters in Bangalore, Karnataka to neighboring states and across seas.
In his quest to go beyond the ordinary, to set new standards, to innovate, to give up nothing for lost… it was what led him to create a range of internationally awarded and exceptional malt wines, fine whiskeys and wines. We use six-row barley sourced from the vast lands of Rajasthan and Haryana to the foothills of the Himalayas. Due to the high fiber and protein content, six-row barley offers a distinctive depth of character and bold spirit.
The more protein and tannins in the barley, the more fatty acids add to the robust character of the whiskey. Due to the higher husk content, barley produces an oilier wash. Obviously, this translates to a richer, oilier spirit.
This is one of the key reasons why all Paul John whiskeys are bottled at least 46% and not cold filtered. 6-Row Indian Barley is used to create the unique flavor profile of Paul John Single Malts.
Although the barley strain has a lower yield compared to commercially used 2-row barley, its superior quality makes it our raw material of choice.
It is also higher in protein content and lends itself to more robust flavors in our single malt whiskeys.
Goa was especially chosen as the home of our single malt whiskeys, not only because of its unique microclimate, but also because destiny holds a special place in the heart of Mr. Paul P. John.
Having always enjoyed the beaches, the food and the warmth of its people, Goa was the perfect choice to install the malt whiskey plant.
Water is one of the most important ingredients in the making of whiskey and pure groundwater in Goa, along with the sources of rainwater and water that flows through the Western Ghats that are naturally filtered through the wetlands. from Goa, guarantee the quality of our whiskeys, with their perfect balance of minerals.
Our copper alembics, custom made exclusively for Paul John whiskey in India, were specially designed with long necks to create more fruity spirits. The double distillation in these alembics prolongs the intimate contact with the copper, which gives a distinctive, rich and full-bodied flavor to the freshly brewed liquor.
Paul John whiskey has two sets of stills.
The 2-stage pot distillation consists of a ball-shaped Wash Still and an onion-shaped Spirit Still that helps our malt whiskeys achieve their unique flavors. Copper helps remove impurities by reacting with sulfuric compounds present in freshly distilled liquor, giving whiskey a smooth, clear finish without aging.
There are three warehouses at the Paul John single malt plant. The underground warehouse has a capacity of 4000 barrels with a comfortable temperature and is less humid. The upper warehouses are warmer at ground level and hold around 12,000 barrels.
Once used, American oak bourbon barrels from the United States are used to age the new brand.
Goa’s tropical climate increases the rate at which Paul John whiskey matures.
High temperatures are believed to accelerate the creation of intense flavors as whiskey matures in oak casks. A whiskey develops different flavor compositions at different temperatures, so Indian malt whiskey has its own unique flavor configuration.
Paul John becomes over the years the most prestigious single malt whiskey in India.
It is made in the touristy coastal city of Goa, which enjoys a warm climate, which makes its whiskeys that mature more quickly than in hot climates (with a high annual evaporation between 8-10%).
Paul P. John, president of the company, has the prestigious Master Distiller Michael D’Souza, with a recognized and valued, international experience.
India has become the main consumer country of this distillate in the world, it is made from sugar cane molasses.
Paul John counts as a base the barley cultivated at the foot of the Himalayas, which is dried with peat from Scotland (about 30 ppm), and then mixed with the water of Goa, known worldwide for its purity.
Our distillery has been awarded countless times, we currently produce about 12 different expressions of whiskey ranging from 40% (ABV) to 57.8% (ABV).
Our flagship expressions include BRILLIANCE, EDITED and BOLD with 46% (ABV) each.
Our expression without cold filter, “BRILLIANCE”, is a completely peat-free whiskey. “EDITED” has a hint of peat and “BOLD” is a bold whiskey with peat. All of our ingredients come from India, including 6-row barley. We import our peat from Scotland.
“NIRVANA” at 40% (ABV) is a captivating expression from the Indian coast of Goa, awakening the senses with a mild aroma of bourbon, fruit pie and a tantalizing caramel pudding.
We have our most resistant Select Barrels, the “CLASSIC” and the “TURBE”, which are 55% (ABV) and 57.5% (ABV) respectively and the PEDRO XIMENEZ SELECT CASK 48% (ABV) and OLOROSO SELECT CASK 48% (ABV).
Our Zodiac series launched with the release of “KANYA by Paul John” at 50% (ABV). Matured for 7 years in American white oak barrels, its delicious aromas of citrus spices and tropical fruits invite you to savor its creamy caramel sweetness.
Our rarities include the “MARS ORBITER” 57.8% (ABV) and the “CHRISTMAS EDITIONS” 2018 and 2019 46% (ABV). Mars Orbiter offers intense and dramatic scents of peat tinted with orange peel and sweet barley and the Christmas Edition has exquisite aromas of orange blossom honey, praline and delicious baked apples that enhance the delicious flavors of sweet honey, fine raisins and dried plum.
